Cool Vindaloo

Our gentle spin on this famous Goan blend is designed for those who love a hearty
curry but wish to sidestep “big heat”.  We accomplish this feat, by using a generous
amount of mustard combined with other warming spices. This blend has a wonderful
complexity to it. We call it cool, because it has a rich curry flavor with a pleasing mild
heat. However, if you add vinegar or lemon juice into your dish, the mustard elements of
the blend will exude a compelling a hot sourness that complements pork or lamb beautifully.

When adding acidity ( lemon,vinegar) or any big flavor to any dish, be sure to taste while
cooking, so that you can adjust the seasoning to your liking.
