Berber recipe, this blend is surprisingly versatile. It's defining elements of garlic
and chili flake are tempered with warming notes of Ginger, Cinnamon and Allspice
for a flavor that complements a board array of meats and fish.

The Story Behind the Spice Blend:
This blend is a variation of a recipe once used by the Nomadic Berber Tribe of North Africa.
To this day, Berber Desert guides, the Tourags still travel the dessert cooking incredible open pot meals.
This blend approximates the flavors that are traditionally used by them to flavor oily meats like lamb.
It also adds a nice lift to hamburgers and makes a delicious dusting for smoked salmon.

Our friend, Jennifer likes to use the blend to season hummus.
Add about ½ teaspoon to 8 ounces of hummus.
Allow it to be absorbed into the hummus overnight in the fridge. For an easy and
sophisticated appetizer, plate with warm pita bread and chopped uncooked veggies.

As Mr Bill, my ace spice grinder and incredibly nice husband noted:
This is a great seasoning to have at the cabin or take along on a camping trip.
After a few days of plain trout, it can be a godsend.

    I used this wonderful spice to make a beef stew. In addition to the
    beef chuck, wine, paprika, cardamon, and tomatoes, I added 2
    teaspoons of the Berber BBQ Blend and ended up with a most
    tasty and hearty dinner.
