Isot has been cultivated for centuries on the outskirts of Sanliurfa,
an ancient city located on the fertile plain of upper Mesopotamia.
Dating back to the 12th century BC, this area is known
as the cradle of western civilization.
This birthplace of Job and Abraham has been continually
conquered over the millennial by Sumerians, Babylonians,
Persians, Romans, European Crusaders among others.
So it comes, as no surprise that the citizens were indifferent
when the French began to occupy the city in the 1920s.
As local lore has it, an uprising took place when the French
were spotted entering the prized chili fields. Resistance proved too
much and today Sanliurfa is part of Turkey.
What could make a populace rise in the defense of a chili?
Perhaps, its the indispensable flavor Isot imparts to the local
versions of Kofte. It's fruity, chocolate-tobacco flavor is truly unique.
