Having recently moved to Connecticut, it was with great apprehension that my partner and I hosted our first holiday party in our new home. Among our guests were our new neighbors who proved a generous, lively and engaging bunch. For dessert, I made 2 pear upside down cakes using a recipe from the Canal House series. In one I used the ginger that was called for, in the other I used Quatre Epices. This wonderful mix of pepper, clove, cinnamon and ginger clearly tipped the scales on taste. The cake in which I used the spice mix disappeared immediately. It's fraternal twin sat half eaten for the entire party. Many asked what spice they were tasting in the quickly savored cake, enthralled by the flavors. Quatre Epices is now my go-to spice for this cake and I'll be trying it out on other recipes in the New Year. Try it, you won't regret it! It helped me make many new friends.
