
Pretty, Spicy Ginger Bread Cookies
About three years ago, I was reading-up on old recipes, when I found a traditional
French pate blend called Quatre Epices or four spice blend.
The ingredients stopped me cold in my tracks.
With its mix of snappy ginger, aromatic clove, cinnamon and warming black pepper, the blend seemed to be a
French version of Garam Masala.
The next day I mixed up a batch and really liked the way the spices held together. The boldness of the black pepper.
really came through but the clove and cinnamon made sure it wasn't too overwhelming.
While it may have been invented to mitigate the gameness of a goose liver. it really shines as a dessert spice.
Once you try it, I think you will agree it is a perfect foil for big sweet flavors like molasses.

ginger bread and cookie recipes.
