Every Sunday, we participate
in the Marin Civic Center Farmers’ Market.
Last year, a woman came by and
we started to chat. She asked me if
I carried Harissa. I noted
that we only worked with dry products. To
which she replied, “ Well, I
don’t want the oil anyway...too many calories.”
Voila, a great idea was born,
our Dry Harissa.
This blend presents a
wonderful balance of compelling flavor that is not
excessive hot. It is anchored
by a bold combination of chili flake, garlic
and spices that are accented
with a tangy caraway.
Because you can mix it with
the oil of your choice, you can easily modify
its flavor and texture to
create unique accent notes. For example you
can add olive or grape seed
oil to make a paste; combine with an
infused oil to make a special marinade or try a pinch in your next
vegetable sautee.
As with many of our blends,
Dry Harissa is amazingly versatile, so let your
inspiration be your guide and make something memorable.
