This curry is based on a very old
Anglo-Indian recipe and is made in the Madras style.
I
created this blend with the idea that it was to be used as an accent flavor
that
would do well with cream sauces, mayonnaise, dips, even
leftovers.
I had
a whimsical vision of this blend as “the little black dress” of spice
land.
Just,
a little something you could bring out when you wanted to pull it
all
together.
It turned out to be a little
more complicate that I had anticipated. But, I kept at it.
By repeatedly making this
blend, I taught myself how to work with spices.
From repeated experimentation,
I found that some elements need to be cooked, others
tempered and then ground in a
particular way. Once I had unlocked these secrets, I
found the blend worked much
better. Then I realized the blend would present a more
cohesive flavor if it was
crafted using a specific order of addition. That did it.
Finally, I had just the right
blend.
With over 9 ingredients, our
curry is nuanced blend that is well balanced with a mild
coriander accent. If you
like to entertain, this blend is a must. It is infinitely useful
and seems to add just the
right touch to dips, sauces, fish , poultry or rice.
Ingredients: Coriander, Cumin, Ginger, Fenugreek,
Mustard Seed, Cinnamon,
Cardamom, Chili and other spices. NO SALT
