The play of crushed Juniper Berries (think gin) and Marjoram creates a freshness that mitigates the gameness and infuses the poulty or pork with an nice herbal note. It's a great flavor combination that works well on its own and complements a savory stuffing mix as well.
To make the brine work, just follow this easy recipe using Kosher salt and sugar.
Recipe: The salt sugar ratio is 1 cup of salt to 1 cup of sugar, to 2.5 gallons of water. For added flavor, peel a head of garlic and lightly smash the cloves and add them to the water. Garlic infuses well and will add a nice brightness to the overall flavor. Note: for a smaller items like pork chops or a half turkey breast use about half of the brine seasoning pack and about 1/4 cup each of salt and sugar.
