will adore this blend. Based on an old North African
Berber recipe, this blend
exudes a flavor profile that is surprisingly versatile.
Its defining elements of
garlic and chili flake are tempered with warming notes of
ginger, cinnamon and allspice
for a flavor that complements a board array of
meats and fish.
As Nomadic Berbers once used a
variation of this blend for open pot cooking
it excels as a rub for oily
meats like lamb. It also adds a nice lift to hamburgers and
it makes a delicious dusting
for smoked salmon. Our friend, Jennifer likes to use
the blend to season hummus.
Add about ½ teaspoon to 8 ounces of hummus.

I used this wonderful spice to make a beef stew. In addition to the beef chuck, wine, paprika, cardamon, and tomatoes, I added 2 teaspoons of the Berber BBQ Blend and ended up with a most tasty and hearty dinner.
