Last year, while we were enjoying a late summer barbecue, I got an idea for a new spice blend. It seemed like there was a new flavor, lurking on the tip of my tongue.
It wanted to be plucky and tangy with a touch of smoke and a dash of heat. It had a kind of umani quality to it.. just the kind of flavor that would work with ribs, steak or a big juicy pork chop.
But most of all it had to be super easy to use. Naturally I turned to one of my very favorite flavor families: South Western/Mexican. I scribbled some notes on a paper napkin and shoved it into my bag. The next day, when I looked at the note, the ink had smeared and it was impossible to decipher. But, it didn't seem to really matter. I could still sense that taste. What was it?
Later that Monday, when I stepped into the kitchen, the blend seemed to materialize without a lot of fuss.( I love when that happens- it's like spice magic) As soon, as the first batch was made, I wanted to eat it immediately. The color was good, the aroma had a nice even quality and it had "what is that ingredient" mystery going for it.
When we made pork chops that night, I knew it was a winner. They were "finger licking... kill me now" good.
Everyone who has tried our Adobo Rub seems to really like it and I hope you will too. This is the kind of seasoning, you'll want on hand for the summer months. A quick sprinkle will finish a nicely grilled steak or take that old Tri-Tip to a new dimension with an Adobo marinade. Add 2-3 teaspoons of the Adobo to canola oil. Mix. Then paint it on the meat and grill. Organic, easy and so delicious.
