Munch, Munch, Crunch!
Whatever photographic qualities our easy-to-love Dukkah may lack,
it more than compensates with a buttery, softly spiced, nutty flavor.
After playing around with a number of recipes, I found that adding
fennel or the odd chili flake was an interesting spin, but ultimately
it limited the genius of this blend, versatility. Dukkah offers a ready complement
to vegetables, fish or chicken because it harmonizes with their flavors beautifully.
To make really great Dukkah, one has to get out of the way of the ingredients.
If you use fresh organic nuts and toast them just so, they take on a mellowness
that is accepting of softer spices. Blended at just the right temperature and in the
appropriate sequence, these minimally processed ingredients come together to take
on a sunnier demeanor than they would on their own.
When we make Dukkah, Bill and I are honor bound to taste each batch. After
years of testing, we found our taste buds seem to reach the arc of acuity around noon
especially when Dukkah is involved. Hmmmm
Here are some favorite ways to enjoy Dukkah.
Sprinkle over salads; add to yogurt and fresh fruit; dust over steamed veggies; plate
or finish pan fried fish; for those who love to bake, try it in a pie crust!
Or jazz-up your favorite garlic bread recipe. Here's how:
Split a baguette in half. Sprinkle the bread with a fruity olive oil.
Add chopped garlic that has been lightly sauteed in butter. Place on a tin
foil lined pan. Insert into a preheated oven and bake for about 10 minutes
at 250 or until very crisp. Serve immediately.

I love this dukkah! I usually eat this spice mix with bread and olive oil...dip the bread into the oil, then into the dukkah, then into my happy mouth it goes. I've ordered this twice and will continue ordering it as I think it's absolutely delicious. Thank you!

Found a recipe a while back for Dukkah lamb chops . . . was going
to make my own, but we were heading down to the Bay area and
always plan on the Marin Farmers' Market on the way home to the
southern Oregon coast. The amazing flavor of this blend made the
dish!

I sampled Dukkah on bread at the market... YUM!
I sprinkled on top of salad... YUM!
I sprinkled on popcorn... YUM!
I sprinkled over scrambled eggs... YUM!
I did make some on bread with olive oil to take to a finger food
serving at a party... YUM!
